KETO VANILLA SHEET CAKE

INGREDIENTS:

  •  4 eggs, room temperature
  •  ¾ cup maple syrup
  •  1 t baking soda
  •  4¾ cups super-fine almond flour
  •  ½ cup coconut oil, melted
  •  ¾ t vanilla extract
  •  ½ t sea salt
  •  1 cup buttercream frosting

INSTRUCTIONS:

  1.  Preheat the oven to 350°F. Line a sheet pan with parchment paper and grease the sides with coconut oil.
  2.  Whisk eggs, vanilla extract, salt and maple syrup in a large bowl.
  3.  Fold in the baking soda and half the almond flour, stirring well to combine.
  4.  Mix in the coconut oil and remaining almond flour.
  5.  Transfer the batter to the prepared sheet pan and spread into an even layer.
