Low Carb Cracker Toffee

INGREDIENTS:
Almond Flour Crackers:

  • 2 cups almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 large egg
  • 2 tbsp salted butter melted

Topping:

  • 3/4 cup Swerve Sweetener
  • 1/2 cup butter
  • 1/2 tsp vanilla extract

Pinch salt:

  • 2 tbsp powdered Swerve Sweetener
  • 4 ounces Lily's Dark Chocolate chopped
  • 2 tsp coconut oil or avocado oil
  • 3/4 cup chopped toasted pecans

Low Carb Cracker Toffee

INSTRUCTIONS:

  1. To make the crackers:
  2. Preheat the oven to 300F.
  3. In a large bowl, whisk together the almond flour, salt, and baking powder. Stir in the egg and the melted butter until the dough comes together.
  4. Turn the dough out onto a large piece of parchment paper and pat into a rough rectangle. Top with another piece of parchment paper and roll out to a 1/8 inch thickness, as evenly as you can. Remove the top piece of parchment paper.
