INGTREDIENTS:
- 6 large eggs
- sliced lemons for topping optional
- Sweetener
- 1 cup swerve granulated works best
- or Lakanto
- 2 cup heavy cream or 2 cups coconut milk
- 2 tablespoons lemon zest about 2 lemons
INSTRUCTIONS:
- Preheat the oven to 300 degrees.
- Place all the ingredients in a mixing bowl and combine with a hand mixer for 60 seconds.
- Pour the ingredients into 1/2 cup ramekins.
- Place the ramekins in a large rectangular baking dish.
- Prepare a bain marie by pouring boiling water into the baking dish until the outside of the ramekins are covered 3/4 of the way from the top.
