SWEET CHILI GARLIC GLAZED HAM

INGREDIENTS:
- 2 hot red peppers
- 2 tablespoons apple cider vinegar
- 1 tablespoon fish sauce
- 1/4 teaspoon xanthan gum
- 1 Jones Dairy Farm Whole or Half Family Ham
- 1/2 cup water
- 1/4 cup erythritol (can substitute sugar or honey, as desired)
- 2 cloves garlic, chopped
INSTRUCTIONS:
- Cut peppers in half lengthwise and remove ribs and seeds (keep some of the seeds if you like things hotter). In blender, combine peppers, water, sweetener, garlic, vinegar and fish sauce. Blend until mostly smooth. Transfer to medium saucepan and bring to boil over medium heat. Simmer 3 minutes. Remove from heat and quickly whisk in xanthan gum to combine. Let cool to thicken.
- Preheat oven to 350˚F. Place ham in large baking dish and add 1 cup of water to the bottom of pan. Brush ham all over with half of glaze. Tent with foil and bake 1 hour.
